Summertime and the simple pleasures of good food. Here are some of my and my kid’s favorite simple pleasures of summer…
The anticipation of ripening berries. The wild ones are especially fun to pick and eat. What a wonderful discovery to find trailing blackberries growing in our own backyard!
A mini harvest from the garden.
Nursing in the hammock.
Drinking water from the hose.
Homemade popsicles.
Summer birthday parties, birthday cake and ice cream!
The following is our favorite popsicle recipe – a vegan chocolate pudding, which comes from one of my favorite cookbooks, How It All Vegan.
Sinful Chocolate Pudding
1 cup soft tofu
1/4 cup sunflower oil
1/2 cup sweetener (I use organic cane sugar but I have been known to use brown or white sugar too!)
4 Tbsp cocoa powder
1/4 tsp salt
1 1/2 tsp vanilla
Directions:
In a blender or food processor, blend together all the ingredients until smooth and creamy. Spoon into popsicle molds and freeze or chill well before serving. Makes 2-4 bowl servings or about 16 popsicles.
