It’s time for another Pennywise Platters Carnival from The Nourishing Gourmet. Welcome to my new readers!
Making space in the fridge is a frugal, nutritious and time saving thing to do. Especially if you often wind up with lots of leftovers like we do. And not only is saving time and eating nutritious foods a good thing, it’s essential for busy breastfeeding moms to keep up our energy. And when combined in a special way leftovers can rock your socks off. Say goodbye to your mother’s overcooked droopy vegetables and boring tasteless grains, and say hello tantalizing, tasty, impress-your-friends platter of yumminess!
This is one of our favorites because it can be modified depending on what we have lying around. It really doesn’t matter if you have leftover plain chick peas or black beans cooked up all spicy for a Mexican dish, quinoa salad or rice pilaf, stir-fry veggies or greens. Once you combine everything following these guidelines, it is sure to be a hit.
My kids love this because it tastes so good, and I love this not only because of how it tastes but because of how nourishing it feels and because it’s so fast to make!). My friends who popped over for lunch one day loved it. And what I take away from this recipe is as long as you have some cheese, onion, soy sauce and tomatoes on hand, you can turn anything into a delicious meal!
Melodie’s Vegetarian Hash From Leftovers
1 small onions, chopped
2 Tbsp oil
1 1/2 cups cooked grains
1 1/2 cups cooked beans or other legumes
1 1/2 cups cooked vegetables
1 tomato or 1/2 cup diced tomatoes, canned
2 Tbsp tamari or soy sauce
1/2 to 1 cup grated cheese
Directions:
Saute onion in oil until tender. Add remaining ingredients except cheese and heat thoroughly. Stir in cheese at end until melted.
Makes Lots!
If you cook twice as much grains and legumes as you need for another recipe, you can use the extras later in the week for this hash, burritos, casseroles or other recipes.

I have got to keep this on hand – I adore use-up-leftovers ideas. I wasn’t sure what a “hash” was going to be, but I guess it’s just “stuff cooked and smothered with cheese”?
