There’s a carnival going on today at Kitchen Stewardship called the October Fest Carnival of Super Foods. She’s being kind enough to accept a post with links to older recipes that contain some Super Foods, which is great because I was interested to see how many of my recipes would be eligible for this carnival. I counted them up and there are actually quite a few that contain at least one Super Food (I’m so glad to see it!), but rather than scare you away by posting all of them I’m going to link to the ones that are the most nutritious and have the most Super Foods in them.
Maria’s Secret Oatmeal has at least two super foods: oats and sunflower seeds, with the option of adding more nuts and seeds like flax or almonds. It has roasted crushed spices that makes this a very special savory breakfast recipe. Although this contains the least of the super foods, I highly recommend it anyway.
Winter Squash Soup has five super foods: Squash, onions, garlic, cinnamon and miso. Add some nutmeg and you’re done. Enough said.
Vegetarian Hash From Leftovers has four super foods: beans or legumes, tomatoes, onions and garlic with the possibility of up to ten if the veggies you choose include broccoli, carrots, squash, red or orange peppers and spinach and if you use olive oil. This is super easy to make and makes use of all your leftovers.
Roasted Red Pepper and Tomato Soup has five super foods: olive oil, onions, garlic, red peppers, and tomato. This is a spicy red soup, very warming for the fall and winter months.
Quinoa, Soaked Mung Beans, Wilted Greens and Cherry Tomatoes has six super foods: mung beans, tomatoes, garlic, olive oil, spinach and lemons. This makes a nice, light, refreshing dinner.
