Once upon a time I lived in a little lake cottage in the woods with two male roommates who meant the world to me. We cooked together, we ate together, we stayed up late stoking our wood stove fire and talking about school, partners, spirituality and how we might change the world. We talked about opening a restaurant together. The Original Country Kitchen. In it we’d throw together all these wonderful ingredients we’d grow in our on-site garden. We’d serve real food and start a food revolution. People would come from all over to taste and understand the beauty and health benefits of eating vegetarian. We thought this recipe might be one of our signature dishes.

The recipe I wrote out for this is taped inside a binder full of recipes that go back to when I was a kid. It was written on the back of a label for canned tomatoes and shares a page with Apple Spice Cake and Mushroom Miso Gravy. We never got close to opening a restaurant because once our lease was up we went in separate directions, like people do when they’re in university trying to figure out who they are and where they’re going. But I have Foodie Fridays now. And through virtual reality I can share this recipe with you. Some dreams come close enough.

Mm. Look at all those yummy sesame seeds!

Sesame Peanut Noodles

1 package (454 grams) of whole grain noodles. My favorites are buckwheat soba noodles, which you can find in health food stores, or kamut, rice, or whole wheat spaghetti.

2/3 cup toasted sesame seeds (did you know sesame seeds are full of calcium?)

3-4 green onions, chopped

2 cloves garlic, minced

3 Tbsp natural peanut butter

2 Tbsp rice vinegar

5 Tbsp toasted sesame oil

5 Tbsp tamari (soy sauce)

5 Tbsp sunflower oil

1 Tbsp sugar (or natural sweetener)

Directions: Place all ingredients in a small bowl and whisk until combined.  Pour over freshly cooked and rinsed pasta.

Serves 4
