This broccoli and potato soup has been a staple in our house for the past few weeks. What with getting our house ready for selling and moving boxes to the new house, I haven’t been feeling very creative. Plus, everyone likes this soup so it’s been an easy choice. I like it because I only need to add cream or milk if I want to and even when I do it isn’t too rich. (I’m not a big fan of rich creamy soups.) All you need is some broccoli, onion, and potatoes (nice and frugal) and you’re pretty much set.

Broccoli and Potato Soup
1 bunch of broccoli, chopped
2 medium potatoes, chopped
1 large onion, chopped
4 cups of vegetable broth
1 clove of garlic, minced
1/4-1/2 tsp salt
pepper to taste
1/2 cup cream or milk (dairy or substitute or optional)
Directions: Chop vegetables. Simmer in broth with garlic, salt and pepper until tender. Puree in blender or with blender wand. If adding cream or milk stir in after the soup has been blended.
Serves 4.

This soup looks great! I like ones that use potato instead of milk too, because my teenager is lactose intolerant and too much milk makes him sick. I submitted a link to an eggplant parmigania recipe, which our family loves.
