In the quest for a new healthy and easy dessert I stumbled upon this super kid-friendly idea. I put everything out as seen in the photo and let my kids make their own sundaes, while I made myself a parfait. Even though yogurt and fruit mixed together is one of their favorite snacks or desserts, having all the toppings ready to choose, making it themselves, and putting them in fancy glasses made it a lot more special. If you have a bunch of kids over, either for a play date or a birthday party, this would be a fun activity when tummies start to get hungry.
This recipe will serve 2-3.
Yogurt Sundae or Parfait
2 cups plain organic or raw yogurt
1/2 tsp. vanilla
1 Tbsp honey
Toppings: choose any or all
fruit, chopped (bananas, mangoes, oranges, peaches, pears, apples, melon, kiwi, etc)
coconut, shredded
berries (strawberries, blueberries, raspberries, wild berries, etc)
nuts, chopped
seeds, toasted
raisins, dates, apricots or other dried fruit
granola
Directions: Mix yogurt, honey and vanilla. Chop or slice any toppings you want to use.
Spoon yogurt into a dish and cover with toppings of your choice.
For a parfait, layer the yogurt and toppings in a pretty glass. Top with a sprig of mint, if desired.
Serve and enjoy.

Vegetarian Foodie Fridays
If you have a vegetarian recipe or vegetarian-related food post I encourage you to participate in my linky. So far, in my travels through food blogs, I have yet to find another vegetarian carnival. Vegan or vegetarian dishes or desserts are welcome. Dairy and eggs are fine, just no meat. I respect everyone’s choice to eat meat, but I would like to keep my blog meat free. Many thanks.

Great idea! Kids love it when they can make things for themselves especially when there is such a nice selection of choices on offer. I tried to join your carnival but my URL is too long and I can’t change it so here’s a link to my recipe http://www.21stcenturyhousewif....._Cake.html
I like to support vegetarian carnivals – we are not vegetarian but my family and I are trying to eat less meat both for the sake of our health and for the sake of the planet. There is a Meatless Monday carnival at Hey What’s For Dinner Mom http://heywhatsfordinnermom.blogspot.com/, but that is the only other one I’ve found so far. Thanks for hosting
Great blog! Thank you for finding mine, I linked up and following, thanks!

Hi Melodie – thanks for the invitation. I added a few links above. I’ve been trying to increase my veggie intake, so your blog will surely come in handy. I love that you let the kids “make their own”. I bet they loved that!

Looks good! Sometimes I use vanilla bean pods instead of vanilla extract for yogurt and yogurt smoothies. It looks fancier and I think tastes a bit better than just extract.
Again, like you said, Same stuff but looks fancier so more novel to kids.

Hi, Each time, I see all those fruits and toppings, I want to eat some. That is so refreshing.
I made something different and interesting tonight. Mexican lasagna rollups with only cheese and vegetables. I made up my own combination of spices to make it Mexican and it was a nice change. It goes well with cut up vegetables or something cool.
Thanks for linking this to My Meatless Mondays. We are getting some interesting recipes, as the weeks go by and I hope people will join us. I agree with you that having your Vegetarian link gives access to many who would like to cut back or give up meat. I make vegetarian chili, in the winter. There are many choices out there.
There is a group that are purists, for lack of a better word, healthy purists, who once a month give a vegetable and we all use it to make something creative or not. No meat, no milk, no eggs…..It is Sweet OR Savory Kitchen Challenge for anyone who may be interested.
