Hooray! Something new to make with cabbage! Part of my intention with Vegetarian Foodie Fridays is to make at least one, if not two or more, of the dishes posted on my linky each week. This week I decided to feature one of the dishes I tried at Vegetarian Foodie Fridays. This past week I tried the The Local Cook’s Cabbage Au Gratin. I love cabbage but generally only make coleslaw with it. One day I would like to try some Vegetarian Cabbage Rolls, but since I no longer like eating soy meats, I would like to try making them with an alternative. (Anyone have one?) So I was stoked to find this recipe and decided to modify it a bit by adding some beans for protein and changing the ingredient amounts a little. This is how I made it:
Cabbage and Beans Au Gratin
3 cups cabbage, shredded
3/4 cup carrots, shredded
1/2 cup green onions
1 can kidney beans
3/4 cup milk
2 eggs
1/2 cup cheddar cheese, grated
2 Tbsp parmesan cheese
1 Tbsp parsley
Directions: Sauté veggies in a saucepan. Just as veggies go soft add drained and rinsed can of kidney beans and place in a casserole dish. Pour mixture of milk and eggs over the vegetables and beans. Sprinkle cheeses on top and bake for 30 – 35 minutes in 350 F degree oven.
Since I added an extra egg it came out a little but more like a quiche minus crust, but that was fine. As the picture shows I also used my cast iron skillet to bake it in too, which is always gives dishes a little more home-on-the-range effect. This is a good dish for those who don’t like a lot of spice. I generally cook with lots of spices and love strong flavours, but my girls and dinner guest enjoyed it for its simplicity. I’m glad I increased the amount of cheese and eggs and added the beans. The extra protein boost was great and my girls always eat better whenever beans are involved.

I’ve noticed that the meals I’m cooking these days for my family are slowly but surely becoming more vegetarian. There’s something about summer I think that makes us non-veggies want to eat less meat!

also, love your site. I have 2 kids(4 & 2) and I nursed them both until they were over 2. my youngest just weaned herself about 2 months ago. I nursed straight for about 4 1/2 years. It was bittersweet when it ended. I was ready to move on, but will cherish the bonding I have with my girls.

@Alex – My dinner guest (A very good friend) asked me the same question! Made me laugh. I suppose beans and cabbage do add up to some toots but personally my body is so used to this kind of food it doesn’t affect me that much. But non-veggies should be on guard I guess. (giggle giggle)

I finally found Miso!!! I hunted high and low, and finally found it at Superstore!! All that effort for a $3 package of soup spice. Jeepers. BUT I found it, and I made your Udon Miso soup with the broccoli and spinach? SOOOO GOOOOD. The only one who didn’t like it was my 22 month old. Which is odd. He usually likes everything.
