I was excited to try out the Organic Coconut Flour I received from Tropical Traditions. A couple months ago I reviewed their Organic Virgin Coconut Oil and I have since fallen in love with using it for stir frying, baking, and basically using it anywhere I would otherwise use butter or oil.
Upon opening the flour it I swooned over the smell and had both my daughters and our neighbour smell it too. The coconut flour is made from 100% coconut so it smells divine. My neighbour and I discussed our approval of the high protein and fibre content of the flour and agreed it was a great new addition to my pantry and cooking and baking repertoire. Even though it is the consistency of regular grain flours you can eat it right off a spoon too. Yum! My daughter and I made these Pumpkin Coconut Squares and they turned out great. We devoured them within two days. I love that this flour is gluten-free which means I now have something to cook with to make cakes and bars for my gluten intolerant friends which I will enjoy too.

i bake pretty much every day so there is a lot I could do with it. I like to make my children things like homemade muffins for their mid morning snack on school days here.

I’d make cookies! Have not found a combination of wheat-free flours that makes cookies that resemble texture of wheat flour cookies. Would also make brownies with cacao nibs for crunch!

I will make coconut bread from cheeseslave’s recipe and “breaded” friend clams. I’ll also make some cupcakes inspired by the Livable Low Carb blog (now gone). She used beaten egg whites with the yolks and coconut flour folded in for a moist and spongy texture.
