Mollie Katzen is a foodie soul mate of mine. Thank goodness for her Moosewood Cookbook, as I would have never gotten through the early vegetarian foodie years without it. I’ve been making this healthy apple crisp for almost as long as I’ve been a vegetarian! If you know me in real life you’ve probably had this before. Maybe more than once. It had been to potlucks and has graced Thanksgiving and Christmas tables next to my famous Vegan Pumpkin Pie. It doubles as both a dessert and breakfast dish. It is more hearty than it is sweet, and tastes excellent warm or cold, with whipped cream, ice cream, cream or milk. I recently made mine with apples from our new apple tree. They are so good! I swear, untouched, sun ripened, in-your-own-yard apples and other tree fruits are The. Best!
If you don’t already own Moosewood Cookbook, here is the recipe. If you do own it, just go to page 186. I hope your page will soon be as well worn as mine.
Apple Crisp
8-10 medium cooking apples
1/4 cup walnuts
1/4 cup sunflower seeds
1/2 cup orange juice
juice of one lemon
2 cups raw whole oats
3/4 cup flour (any kind you want)
1/2 cup butter
1/3 cup honey
1 tsp. cinnamon
1/2 tsp allspice
1/2 tsp salt (I only use a pinch)
Directions:
Peel (if necessary – I don’t), pare and slice the apples. Drizzle them with fresh lemon juice. Spread half of them into a large oblong pan.
Melt the butter and honey together. Combine with oats, flour, nuts and seeds, salt and spices. Spread 1/2 this mixture (actually crumble, it won’t really spread) onto apples in the pan. Cover with the remaining apples and the rest of the topping. Pour OJ over the top. Bake 40-45 minutes, uncovered, at 375 degrees. Cover if it crisps too quickly.
Note: If you substitute pears or peaches for the apples, reduce baking time to 25 minutes.
Serves 6-8.

This looks so good. I LOVE the moosewood cookbooks, all of their recipes look so good. So healthy! So tasty! To answer your question I do have a favorite recipe. I would doubt that it’s from the same cookbook you have (it’s my moms from a while ago).
Here’s a link to it though. It’s this super good rice pudding. I’ve also made some sweet potato burritos which are also on my blog but I won’t overwhelm you =)

This sounds wonderful, I did use up the last of my apples on some Apple bread this morning so I think I’ll have to go out and get some more to make this later in the week!
I’m going to check out the cookbook too, sounds like something I need to add to my collection.

That sounds so delicious! And I love sunflower seeds but usually don’t eat them fast enough to justify buying them, so finding another way to use them is awesome!
I love apple crisp and yours looks delicious. I think I could eat the topping alone and still be perfectly happy.

Apples and cinnamon is my all time classic combination.
This looks wonderful (as usual!). I have been toying with the idea of getting an apple tree for our yard as well. This year, we were blessed to have a friend who let us come pick apples for free.

Apple crisps/pies/cobblers/anything! are one of things I look forward to most when fall comes! So glad you shared this with the hearth and soul hop this week…the only way it’d get better is if I could have a big dish!

I love apple crisps, well I love apple anything but what I am most excited about is your use of honey for the sweetener. My recipe uses an unbelievable amount of sugar so this would be a great change! I have never made anything out of the Moosewood book but I have looked through it many times at the bookstore! Thanks for sharing this with us at the hearth and soul hop!

Hi Melodie, Thank you for sharing this yummy recipe to my get-together on Fresh Clean and Pure Fridays/Seasonal Saturdays. I chose to feature it as one of the best posts from last week. I hope you can stop by again soon. I love all of the Mousewood recipes and have the cookbook collection from years back! Roz
Holy man, this does look good. I have cranberry-rhubarb crisp going in the oven right now, but I’m bookmarking this for next week! I like mine fresh from the oven with some homemade whipped cream and then cold the next day for a tasty snack.
Thanks for adding this to Midnight Maniac Meatless Mondays!

Yes, that’s the Apple Krisp from the original Moosewood. Of the recipes I first learned from that well-worn, well-loved cookbook, probably the hummus is the one I’ve changed the least. First learned to cook a whole lot of vegetarian basics like hummus, tabouli, and pesto from that book.
