Welcome to Vegetarian Foodie Fridays! Where we’re not just Meatless on Mondays, but all week through! Hi! My name is Melodie and I’m a long time vegetarian who’s into real food, holistic nutrition, and healthy living but suffers from a sweet tooth! (I love homemade baked goods and ice cream). Carnival Guidelines
- You do not have to be a vegetarian/vegan or have a vegetarian/vegan blog to participate.
- Your dish must be completely meat-free (no fish or seafood and no meat based broths, etc). Eggs and dairy are fine. Desserts and other baked goods are welcome as are vegetarian-friendly food-related and health posts.

My recipe this week is a double header: Potato Leek Soup and Spelt Flour Biscuits. The biscuits were inspired by Who is Laura – Dr. Laura’s Adventures’s Spelt Buttermilk Biscuits. I modified the recipe a little bit but these are the best biscuits I’ve ever made and my family and next door neighbour has been asking me to make them every night since!

Well, that would go to Who is Laura, naturally. I was also excited by Bella Rose Cottage’s Lavender Sugar (it will make a great gift, I think) and Reem’s Eats Rice Stuffed Acorn Squash. This weekend is Canadian Thanksgiving and stuffed squashes are one of my favourite vegetarian entrees. It got the wheels turning.

We just did another hour of home schooling thanks to your post Christina! We watched the Magic School Bus Episode and followed it up with the other clip about the disappearing bees. She told me the 2nd one was boring (of course she’s 6 and still likes Dora so go figure – I liked it though) but she loved the Magic School Bus and we learned a lot together. We had lots of good conversation too. I love it when timing is just so right!
