My Recipe This Week
I am sorry to say that I am taking yet another week off from posting a recipe. I do plan on being back next week but I am in the middle of applying for my Master’s degree. Please make sure you check out the recipes below made by some fantastic fellow bloggers.

Shout Outs
This week I made these yummy Black Bean Burgers from The Cottage Sisters. As soon as they posted it last Friday I knew it was what I would be making that night. I did make a couple of changes to the recipe. Mine were eggless (because I had no eggs, not because I was doing the vegan-thing) and I used a little bit of extra oil and some oats in addition to the other ingredients. They were very delicious and I was able to freeze about 6 patties for future use.
I also made this Light Eggless Banana Cake from Treat & Trick (again because we had no eggs and also because we had a bowl full of over ripe bananas). Since the recipe made two cakes we added chocolate chips to one of them and pecans to the other. Both cakes disappeared in no time.

Don’t worry about not posting a recipe – that is wonderful that you are applying for your Masters! I like the recipes you featured, and can’t get over how deliciously light and fluffy the banana cake looks and yet it doesn’t have eggs. Thanks so much for hosting.

Posting this week about food-pantry donations. For the hungry, any food is better than no food. But calories-in-lieu-of-nourishment isn’t sustainable. And it isn’t moral. Especially when you’re in a position to do something about it.

LOL I *am* doing the vegan thing but as I’m quite new at this I wondered how you substituted the egg in the black bean burgers? Was it enough to just add the extra oil & oats? And could you say about how much you added? That would be awesome! I’d love to make these burgers but somehow making patties is not my strong point (it wasn’t when I still used eggs
