Sometimes it’s the simple dishes that can be the most satisfying. I really wanted to make something quick, easy and nutritious this week with as few ingredients as possible, but enough to be filling and taste great. It wasn’t too hard to come up with this recipe because frankly, there wasn’t much in my fridge when I went looking for inspiration. Thankfully, my few tasty ingredients turned into something super delicious that my kids loved and hubby thought was “very good – minus the chick peas.” Sorry dear.
Whole Wheat Spaghetti With Chick Peas and Broccoli
Enough spaghetti to feed a family of 4
2 heads of organic broccoli, cut up into small pieces
1/8 cup extra-virgin olive oil
10 cloves garlic, crushed
1/2 tsp red pepper flakes
1 jar organic tomato sauce
salt and pepper, to taste
freshly grated parmesan cheese
Directions: Cook spaghetti and set aside. On low heat, sauté garlic and red pepper flakes in half of olive oil until garlic turns golden. Add tomato sauce and broccoli and cook until broccoli turns bright green, cooked but still crunchy. Toss with spaghetti and drizzle with remaining olive oil. Serve with parmesan cheese and season to taste with salt and pepper.
Serves 4.

Oh wow, this reminds me of an amazing pasta dish I had with chick peas in New York, but have never tried to make! It sounds really similar (although yours is definiltely the healthier version!). Thank you for the recipe!

I love chickpeas! We put them in chocolate chip cookies. Never tried them in spaghetti though.
Simple, easy, healthy dishes are the best.

You know, just the other day I was CRAVING chick peas and I had to have some hummus, but it didnt satisfy and then i remembered how my mother used to make some spaggetti sauce and add the peas in just like your recipe! This Whole Wheat Spaghetti dish looks so simple and delicious, I can not wait to try it! As a vegetarian myself, I am always looking for new great ways to incorporate whole grains and protein into my diet, so the addition of chickpeas (sorry to your husband) is perfect for me!
